I've never made anything with rhubarb before (I used to pick it out of my great grandma's yard as a kid and eat it straight out of the ground), so when a patient at the PT clinic offered us all rhubarb, I intially turned it down. I don't like fruit pies of any kind, and I didn't have any other ideas.
But then they started talking about rhubarb bread. I was intrigued, so I took some to give it a try. I didn't have very big hopes for it.

It was heaven. It was tangy, sweet, cinnamon-y rhubarb heaven.
This is the recipe I used. I didn't realize at the time that I was making such a huge batch of it though. I only had one bread pan, so I opted for the big pan. That website will calculate the measurements for you if you are paying attention and see the option for it.
